The Woods’ Mandarin Cookies available for pickup at – paired with Mandarin Muffin Cakes

  • ½ cup Ricotta Cheese
  • 1 full Orange Rind, zested
  • 2 Eggs
  • ½ tsp Vanilla Extract
  • ⅓ cup Brown Sugar
  • Sprinkle of Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ⅓ Orange – juiced
  • 1 cup Almond Flour
  • ⅓ to ½ cup White Chocolate Chips


  1. Preheat oven to 350*
  2. In a large bowl, whisk the ricotta orange zest
  3. Whisk in vanillaorange juiceeggs
  4. Whisk in brown sugar until completely incorporated
  5. In a separate bowl, combine baking powder, baking soda, cinnamon, and almond flour
  6. Slowly whisk dry ingredients into wet ingredients, and add the desired amount of white chocolate to the batter
  7. Line cupcake tins, and distribute batter evenly
  8. Bake for 15-18 minutes depending on your desired firmness
