Dish: Sunset Salad with (optional) Crack Chicken

Crack Chicken Ingredients:
- 1 pound boneless skinless chicken breast, diced
- 1-2 tbsp Pesto Sauce
- A pinch of Garlic Powder
- Salt & Pepper, to taste
- A squeeze of Lemon or Lime Juice
Crack Chicken Instructions:
- Dice chicken into super small pieces with kitchen shears
- Add to an oven safe pan
- Put the pan in the oven, set to broil on high
- Stir occasionally so the chicken pieces don’t stick together
- Broil until crispy, about 30-45 minutes depending on desired crispness
Salad Ingredients:
- 2-3 tbsp Cracked Chicken
- 1 tbsp Grated / Shredded Parmesan
- 1 tbsp Crushed Pistachios
- 5-7 Fresh Raspberries, broken into pieces
- 2-3 Handfuls of Baby Arugula
- 1 tsp Chopped Chives
- ½ Ripe Avocado
- 2-3 tbsp Balsamic Vinaigrette
- A few Pita Chips
Instructions:
- In a large mixing bowl, mix crack chicken, parmesan cheese, pistachios, chives and raspberries with a fork
- Add arugula and mix
- Mix in balsamic vinaigrette
- Slice avocado, place on top
- Optional: Crumble pita chips on top
